Toris Fisk’s Smoked Fish Recipe

Ingredients

2 cups dark brown sugar
2 quarts water
1 tbls garlic powder
1 tbls ground bay leaves (or 4 whole leaves broken)
1 cup salt
1 tbls sweet basil
1 tbls coarse black pepper

Directions

Mix all ingredients together and stir until sugar and salt are dissolved. Cut fish into pieces and soak 2 hours in brine. Remove, rinse lightly and drain on paper (paper towels on newspaper) until glossy (approx. 1 hour). Place on smoker racks and smoke for 4 – 6 hours depending on the size of the fish pieces. Alder provides the best flavor.
