Peanut Brittle

Ingredients

2 cups sugar
½ cup water
¼ teaspoon salt
½ teaspoon vanilla
1 cup white corn syrup
½ teaspoon butter
2 cups raw peanuts
2 level teaspoons baking soda

Directions

  1. Mix sugar, syrup, water, butter and salt together in a pan. Boil until mixture will form a ball when dropped in cold water (238°). Add the peanuts and stir to keep peanuts from burning. Cook until peanuts become light brown (290°).
  2. Add the vanilla and baking soda and stir in well. Pour into buttered tins. Pull thin.
