Paprika Schnitzel ala Mundorff

I found these in my recipe book written out by my folks. Kinda fun to see their handwriting again. Dad got into cooking when we lived in Portland and used to make the Paprika Schnitzel for us for birthdays or special occasions. Otherwise we ate very simple stuff most of the time.

Ingredients

1 large round steak
1/2 white onion
6 strips bacon
1 small can tomato sauce
1 package sour cream (I'm assuming 8 oz)
1 container fresh Paprika

Directions

  1. Trim fat from the steak and cut it into serving size pieces, dredge in flour. Set aside.
  2. Dice the bacon and fry it crisp including diced pieces of the onion. Remove & set aside.
  3. Return the meat to the pan, browning the steak.
  4. Cover meat with a generous portion of paprika. Add salt & pepper.
  5. Add water (he doesn't say how much), simmer until done.
  6. Mix the sour cream and tomato sauce with the bacon & onion. Pour excess water off the steak and cover it with the sauce. Heat for serving.

Notes

It's good with red wine.
