Lemon Cookies

Description

I got this from Jan Brice. This is the best cookie I have ever eaten. They just melt in your mouth. It's a lot of lemon frosting. More than I think you need.

Ingredients

Cookies

2 cups butter, room temperature
2/3 cup powdered sugar
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 cups cornstarch

Lemon Icing

1/3 cup butter, room temperature
1 teaspoon lemon zest
1/3 cup fresh lemon juice
4 cups powdered sugar

Directions

Preheat the oven to 350. Beat butter till creamy, add powdered sugar. Cream until light and fluffy.
Add zest and vanilla extract. Beat it well. Sift flour and corn starch, add to butter mixture, beat well.
Roll dough into 1" balls. Place onto ungreased cookie sheet. Bake 15 minutes until bottoms are light brown.
Cool on wire rack.

Combine all icing ingredients. Spread or pipe on top of cookies when completely cooled.
