Creamy AF Chocolate Pie

For my mom, Thanksgiving, and Christmas for that matter, have to include chocolate and pumpkin pie. Not just for dessert after the big meal, but for breakfast the following mornings until it is gone. My Gramma Bobby made both every holiday. Her chocolate pie, which my mother adored, was a combination of a Pillsbury pie crust and chocolate Jello Pudding. For Thanksgiving 2022, I made this chocolate pie instead. (I long ago gave up on making pumpkin pie. Costco does it better and cheaper than I can). This pie was AMAZING. I never knew how easy it was to make chocolate pudding! The chocolate flavor from the bittersweet Ghirardelli’s was incredible. Almost everyone loved it. My mom, however, said in her diplomatic way - “it’s good, but it is denser, less creamy.” Well BS. It was richer, sure, but it was creamy as F. So, I am renaming this pie. And making it every year from here on out. It’s delicious, fast and easy.

Ingredients

  • 1 whole pie crust, baked and cooled (or can use Oreo or graham cracker crust)
  • 1 1/2 c. sugar
  • 1/4 c. cornstarch
  • 1/4 tsp. salt
  • 3 c. whole milk
  • 4 whole egg yolks
  • 6 1/2 oz. weight bittersweet chocolate, chopped finely
  • 2 tsp. vanilla extract
  • 2 tbsp. butter
  • Whipped cream, for serving

Directions

  1. Combine the sugar, cornstarch, and salt in a medium saucepan. Stir or whisk together.
  2. Pour in milk and egg yolks, and whisk together.
  3. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (## note
  4. It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined.
  5. Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered.
  6. Cut into slices and serve with whipped cream!

Notes

The pudding is really good and quick to make. I did use premade pie dough - Pillsbury is the only way to go.
