Cranberry Bars

Ingredients

Filling

  • ¾ cup sugar
  • 2 cups rinsed fresh cranberries
  • 1 tbls grated orange peel
  • ½ teaspoon cinnamon
  • 1 cup chopped walnuts
  • ½ cup water
  • ¼ cup orange juice
  • 1 tbls butter
  • ¼ teaspoon salt

Dough

  • 2 cups sifter flour]
  • 1 ½ cup sugar
  • 3 cups oatmeal
  • 2 cups sifter flour
  • 1 ½ cup sugar
  • 3 cups oatmeal
  • 1 teaspoon salt
  • 1 ¼ cup softened butter

Directions

For Filling

Combine sugar and water in sauce pan. Bring to a boil. Add cranberries and cook until they pop. Add orange juice, peel, butter, cinnamon and salt. Cook 5 more minutes or until thickened. Remove from heat and add walnuts. Set aside to cool.

For Dough

  1. Sift flour, salt and sugar. Cut in butter with pastry blender until coarse in texture. Add oatmeal and mix thoroughly.
  2. Put half of the dough in an ungreased 13” x 9” x 2” baking pan, padding firmly. Spread filling and top with the rest of the dough. Bake in a preheated oven at 425 for 25 – 30 minutes or until lightly browned.
