Cereal Chicken

Ingredients

4 skinless boneless chicken breast halves, (about 1 1/2 lbs total)
4 tablespoons mayonnaise
2 cups cereal, I use Crispix
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Directions

  1. The oven should be already heated to 475 degrees F.
  2. Place the chicken breasts, one at a time, between 2 sheets of wax paper or plastic wrap. Pound the breasts with several whacks of a meat mallet or rolling pin so they are an even 1/2-inch thick.
  3. Peel off the paper and arrange the breast halves in a single layer in a 13 x 9-inch glass baking dish. (To fit in one layer, the outside of the chicken may stretch up the sides of the baking dish. This is fine, because the chicken will shrink as it cooks.)
  4. Spread 1 tablespoon of the mayonnaise on the top of each breast, coating well. Set aside.
  5. Combine the cereal, garlic powder, onion powder, salt, and pepper in a large zipper-top plastic bag. Using a rolling pin, crush the cereal, then shake the bag to mix well. Sprinkle the crumbs evenly over the chicken and bake until the chicken is cooked through and the crumbs start to brown, about 15 minutes. Serve at once.

Notes

]Any rice flake or corn flake cereal will do but be sure to choose one that isn't high in sugar content or the chicken will be too sweet.
