Aperol Spritz a la Ciampini

Description

We stumbled on this very local spot while visiting Rome in 2018. We were on our way to dinner when we came across cafe Ciampini in the Piazza di San Lorenzo and noticed it was all Italian families having drinks and bites. We took our cue from the heavy local crowd and settled in for a cocktail…which became three. This cafe served “free” nibbles with each drink order, so we skipped dinner and had a delicious meal of breads, cheeses and meats that just kept coming. Bellisima! 

Ingredients

  • Ice
  • Prosecco 
  • Aperol
  • Soda, club or seltzer water
  • Orange for orange rind
  • Lemon peel

Directions

  1. Fill wine glass with (large sized) ice cube to top
  2. Add 3 parts Prosecco to 2 parts Aperol
  3. Add splash soda water
  4. Peel orange and light rind on fire over glass (this releases oils)
  5. Rub flambeed orange rind around rim of glass
  6. Garnish with fresh lemon peel
