Darcy’s Pesto

Ingredients

  • 1+ cup of fresh basil (packed tightly)
  • 2+ cloves of garlic
  • 1/3 cup walnuts (I prefer walnuts over pine nuts as it gives off a tangy taste)
  • ¾ cup parmesan cheese
  • ½ cup extra virgin olive oil
  • 1/8 tsp salt
  • squirt of lemon juice

Directions

Place basil, garlic, walnuts, cheese, & salt in blender or food processor (I use a food processor). Turn on and add olive oil through the feed tube. Mix until it forms a thick puree. Adjust all ingredients according to taste. Use immediately, refrigerate for a few days, or freeze.
