Yum, Yum, Guys! Fruit Salad

Description

The Thanksgiving when Charlie was two, my Gramma Bobby made her famous fruit salad covered in whipped cream and loaded with mini marshmallows. After the food was served, the room fell silent as everyone dug in and enjoyed the meal. Charlie, focused entirely on the fruit salad, was the first to break the silence when he looked up and exclaimed, "YUM YUM GUYS!"

After we moved to Tillamook, I wanted to make this recipe an asked Chuck to get the ingredients when he was shopping. After what seemed like a very long time, he called me from the store and said, "I have been to three stores and cannot find toasted coconut anywhere!" (I asked him if he could find any toast instead).

Ingredients

1 can pineapple chunks, drained
1 can mandarin oranges, drained
1 can Queen Anne cherries in a jar, drained and pitted
2 bananas, sliced
grapes
1/2 cup chopped pecans, (or walnuts)
2 cups marshmallows, Miniatures
1/4 cup mayonnaise
1/2 cup heavy cream, whipped (not sweetened)
coconut, toasted

Directions

Dump all fruit in colander (cherries last) and drain. Pit cherries. Mix in marshmallows, nuts,and mayonnaise. Fold in whipped cream.
Chill at least two hours. Add 2 bananas just before serving.
Serve with toasted coconut.
